Justin Williams founded Rockwell Ice Cream Co. in downtown Provo. He grew up making ice cream at home and wanted a shop. He and his wife Summer spent two years testing recipes after work. They opened in Provo in 2015. His rule was that if they did it, it had to be the best ice cream they could make.
They churn super-premium ice cream in the shop every day. All natural ingredients, no artificial flavorings, 16% butterfat, spun slowly so it’s denser than grocery ice cream. Flavors rotate, and a lot of them don’t exist anywhere else.
In 2019 the G.O.A.T. Flavor (goat cheese, blackberry-lemon jam, rosemary-honey almonds) won America’s Best Ice Cream. There are scoop shops in Provo and Salt Lake City.
